Ingredients

  • 400 ml passata
  • 2 tbsp tomato purée
  • 300 ml vegetable stock or water + stock cube
  • 2-3 tbsp cream optional, for richness
  • ½ tsp sugar to balance acidity
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • Salt and pepper to taste

Instructions

  • In a small saucepan, combine the passata, tomato purée, and vegetable stock.
  • Stir in the onion powder, garlic powder, and sugar.
  • Bring gently to a simmer over medium heat.
  • Let it bubble lightly for 3–4 minutes to cook the tomato, soften the flavours, and warm it through.
  • Remove from heat and stir in cream if using.
  • Taste and adjust seasoning with salt and pepper.
  • Serve immediately, with a swirl of cream, fresh herbs, or toasted croutons if desired.

Notes

No blitzing required — passata keeps it smooth and creamy without extra work.
Adjust sugar slightly if your tomatoes are very acidic.
Perfect for a quick lunch, feeding kids, or as a speedy starter.
