Ingredients
For the Fries
- 600 g sweet potatoes peeled and cut into thin fries
- 1 tbsp cornflour
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Sea salt
- Olive oil spray or 2 tbsp oil, for tossing
For the Tahini Dressing
- 75 g tahini
- 40 ml cold water
- ½ tsp onion powder
- Pinch of sea salt
To Finish
- 1-2 tbsp peanut rayu or chilli crisp
- 1 small ripe avocado diced
- A handful of fresh coriander leaves
Instructions
Prepare the Fries
- Place the sweet potato fries in a large bowl. Add the cornflour, onion powder, garlic powder, smoked paprika, and a pinch of salt. Toss to coat evenly — keep them dry at this stage. Air-fry at 200°C for 15 minutes, shaking halfway through.
Add the Oil & Finish Cooking
- After 15 minutes, open the air fryer, spritz or drizzle liberally with olive oil, and toss well to coat. Return to the air fryer and cook for a further 15 minutes, until crisp and golden on the edges.
Make the Tahini Dressing
- In a small jam jar, add the tahini, water, onion powder, and salt. Seal and shake until smooth and creamy — the dressing should be pourable but rich.
Assemble
- Pile the hot fries onto a serving plate. Drizzle generously with the tahini dressing. Top with spoonfuls of peanut rayu, diced avocado, and fresh coriander leaves.
Notes
The cornflour coating creates a light crust that crisps beautifully in the air fryer.
Spritzing with oil halfway through gives that perfect “fried” texture without heaviness.
The tahini dressing is balanced — creamy, nutty, and savoury — while the peanut rayu adds heat and crunch.
Ideal as a casual starter, bar snack, or side dish for grilled meats or salads.
