Air Fryer Sesame Chicken and Broccoli Stir-Fry

Ingredients

  • 750 g chicken diced into small bite-size chunks

Batter

  • 150 g cornflour
  • 1 tbsp curry sauce mix powder
  • 1 tsp spice bag mix
  • Drop of water

Marinade

  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 1 tbsp fish sauce
  • Sauce
  • 2 tbsp vegetable oil
  • 3 cloves garlic
  • 1 thumb-sized piece of fresh ginger
  • ½ chilli or chilli flakes
  • 4 tbsp oyster sauce soy sauce will work
  • 2 tbsp honey or sweet chilli if you like it hot
  • 1 tsp rice wine vinegar
  • 1 tsp sesame oil

Vegetables

  • 250 g tenderstem broccoli
  • 25 g sesame seeds
  • Handful fresh coriander
  • 2 spring onions
  • 1 red chilli finely sliced

Serve with steamed basmati rice

    Instructions

    Preparation:

    • Dice the chicken into bite-size pieces. Peel and dice the garlic and ginger. Slice the red chilli finely.

    Marinade:

    • Combine the marinade ingredients in a bowl and toss the chicken in. Allow to sit for a few minutes.

    Batter:

    • Combine the cornflour, curry sauce mix and spice bag mix in a bowl for the batter. Do not add the water unless needed.
    • Line the air fryer with parchment paper.
    • Remove the chicken from the marinade and toss in the cornflour mix. Pop in the air fryer. Spritz with spray oil and cook at 200℃ for 8-10 minutes.
    • Shock and refresh the tender stem broccoli. To do this, place the broccoli in boiling water and cook for 2-3 minutes. While it cooks prepare a big bowl of cold water and ice. Remove the broccoli from the heat, drain and plunge into the boiling water. After 2/3 minutes remove from the cold water and set aside.
    • Check on the chicken halfway through cooking, and spritz with a little more oil. Allow to cook again.

    Sauce:

    • To make the sauce, put the oil, garlic and chilli in a frying pan.
    • Bring up to a warm temperature over medium heat and allow the flavours to develop.
    • After 3 minutes, add the oyster sauce ( or soy sauce ), honey, rice wine vinegar, and sesame oil.
    • Pop in the broccoli. Remove the chicken from the air fryer and toss this into the sauce. Toss everything around, and serve in a big bowl, family style.
    • Garnish with sesame seeds, finely sliced spring onion, coriander and red chilli.
    • Enjoy.
