Partnered with Bia Óg’s executive chef and strategic leadership team to elevate an already established food philosophy into a robust culinary framework for growth. Building on their unwavering commitment to home-cooked, scratch-prepared meals, the work focused on recipe development, nutritional standards, ingredient strategy and culinary systems designed to deliver exceptional food at scale.

The Work
Bia Óg had already established a clear food philosophy: children deserve meals made with the same care, quality and attention as food prepared at home. The executive chef and leadership team had built strong foundations around scratch cooking, quality ingredients and a commitment to creating food children genuinely enjoy.
The engagement focused on translating that philosophy into a robust culinary framework designed to support continued growth. Working closely with the executive chef and strategic leadership team, the work brought together culinary development, nutritional strategy, ingredient standards and operational systems — ensuring that the food offering could continue to reflect the values at the heart of the brand.
A key focus was establishing ambitious nutritional and quality benchmarks across the menu. Each recipe was analysed, refined and developed against clear nutritional targets, including achieving Nutri-Score A across the full portfolio — the highest nutritional rating within the Nutri-Score system, reflecting a strong overall nutritional profile.
Alongside nutritional development, the recipe portfolio underwent extensive culinary refinement. Dish creation, sensory evaluation, nutritional analysis and ongoing tasting feedback informed each iteration, ensuring the final meals balanced nutritional excellence with the most important measure of all: food children would genuinely enjoy eating.
The value of the engagement extended beyond culinary development. Leveraging established industry relationships and the trust built through my own brand reputation, I identified and facilitated a strategic partnership opportunity with a leading Irish brand. The collaboration aligned shared values and created a platform for long-term commercial value for both organisations.
To support growth and consistency, the project also established the culinary foundations required for scale — from ingredient procurement and supplier relationships through to recipe specifications, standard operating procedures and culinary training frameworks.
