Ingredients

  • 450 g celeriac peeled and finely julienned or grated
  • 1 crisp apple peeled, cored, and julienned
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Juice of ½ lemon
  • Salt and freshly ground black pepper to taste

Instructions

  • Prepare the celeriac and apple: Peel and finely julienne or grate the celeriac. Julienne the apple and place both in a large bowl.
  • Make the dressing: In a small bowl, whisk together mayonnaise, mustard, lemon juice, salt, and pepper until smooth.
  • Combine: Pour the dressing over the celeriac and apple. Toss gently until all pieces are coated evenly.
  • Serve: Chill for 10–15 minutes if desired, then serve as a fresh side salad or as part of a light lunch. Perfect with hot smoked salmon salad, a crispy chicken escalope with a little caper butter or rocket or a glazed pork belly. Delicious
