

Chilli Beef Nachos

Ingredients
Chilli Beef
- 1 tbsp oil
- 400 g beef mince
- 1 red & green pepper
- 2 tsp cumin
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 1 beef stock cube
- 500 ml tomato passata
- 200 ml water
- Hidden vegetables: grated carrot & courgettes
- 100 g grated cheese
- Nacho’s / Doritos / Tortillas
Guacamole
- 1 avocado
- 1 tsp lime juice
- 1 tbsp mayonnaise
- Salt & pepper to season
Sour Cream & Onion Dip
- 150 ml Sour Cream
- 75 g mayonnaise
- 2 tsp dried chives
- 2 tsp dried onion granules
- 1 tsp onion powder
- 1/2 tsp garlic powder
Garnish
- Jalapeños
- Coriander
Instructions
Chilli Beef
- In a saucepan on medium heat, begin by browning off the mince with a little oil. Add in cumin, onion powder, garlic powder and smoked paprika. Dice peppers and add to mince. Allow to cook for 5- 6 minutes. Add in hidden veggies if using. Next add in a stock pot, passata and a little water. Allow to simmer for 8-10 minutes.
Guacamole
- Dice avocado into a mixing bowl, squeeze in lime juice, mayonnaise and plenty of sea salt and pepper. Mash to a chunky or smooth consistency.
Sour cream dip
- Combine all ingredients together in a mixing bowl.
Assembly
- Preheat oven to 180℃.
- In a baking dish, add nachos and top with chilli beef and grated cheese, bake in the oven for 8-10 minutes, until cheese is bubbly and melting.
- Top with guacamole, sour cream and onion dip, sliced jalapenos and coriander.
