Crispy Teriyaki Beef with Smashed Cucumbers and Mango Salsa and a Coconut & Lemongrass Rice

Ingredients

Crispy Teriyaki Beef

  • 500 g lean pork mince
  • 500 g lean beef mince
  • 4 tbsp sweet chilli sauce
  • 6 tbsp teriyaki sauce
  • 2 tbsp soy sauce
  • 3 cloves garlic
  • 3 cm fresh ginger
  • 1 tsp lemongrass paste
  • 3 spring onions
  • Sesame seeds
  • Garnish: lime wedge & coriander

Salsa

  • 250 g chopped mango
  • 1 small red onion
  • 2 small sweet red peppers
  • 1 green jalapeño chilli
  • 1 tsp lime juice

Smashed Cucumber

  • 1 punnet baby cucumbers 250g
  • 1/2 tsp salt
  • 1 tsp sugar
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp chilli oil / peanut rays
  • 2 tsp sesame seeds
  • 1 clove garlic grated

Coconut Rice

  • 1 400 ml tin coconut milk
  • 800 mls water
  • 400 g basmati rice
  • 1 tsp sea salt
  • 2 tsp lemongrass paste

Instructions

Coconut & Lemongrass Rice:

  • Bring the 800mls water, coconut milk and lemongrass paste in a large saucepan and bring to a gentle boil. Rinse the basmati rice and place in the pot, stir once, pop a lid on and over a low to medium heat allow this to simmer until all the liquid is absorbed. To serve, remove the lid and fluff up lightly.

Crispy Teriyaki Beef:

  • Warm a large frying pan, add the mince to the dry pan and move it around as it cooks and browns. Allow it to cook for about 8-10mins then grate in the garlic and ginger and add in the lemongrass paste. Add in the sauces and allow this to cook over a medium to high heat for 20-25 minutes until it begins to get a little sticky and crispy bits form.

Smashed Cucumber:

  • Cut the top and bottom off the cucumber. Cut on the diagonal. Sprinkle with salt and sugar and allow to sit in a sieve for a few minutes for any excess water to drain out, then grate in the garlic, add In the other ingredients. Stir everything together and allow it to marinate.

Salsa:

  • Finely dice the red onion, deseed and finely dice the green chilli and sweet mini red peppers, slice the mango. Combine everything in a bowl, toss in the lime juice. Cover and chill. Optional: toss with coriander.

To Serve:

  • Spoon the rice in a warm bowl, spoon in the crispy teriyaki beef next, top with the smashed cucumber and the mango salsa. Garnish with spring onions, sesame seeds, coriander and a wedge of lime.

Notes

If you can only get regular cucumber, they work great - use 1 big one and scoop of the seeds if you can. For the salsa, regular red pepper works fine too.
