Ingredients
Korean Pork:
- 800 g boneless pork loin
- 2 tablespoons Korean gochujang paste
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic minced
- 1 tablespoon ginger minced
- 1 tablespoon sesame oil
- Salt and black pepper to taste
Miso Satay Sauce:
- 3 tablespoons miso paste
- 2 tablespoons creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 clove garlic minced
- 1 teaspoon ginger minced
- Water as needed to adjust the consistency
Spicy Peanut Slaw:
- 200 g white cabbage thinly sliced
- 1 medium carrot grated
- 1/2 cucumber thinly sliced
- 2 tablespoons roasted peanuts crushed
- 1 red chili pepper thinly sliced (adjust to your desired level of spiciness)
- 3 tablespoons mayonnaise
- 1 tablespoon frothing ferments Sriracha sauce adjust to taste
- 1 tablespoon rice vinegar
- Salt and black pepper to taste
Garnish:
- Fresh rocket leaves
- Red onion thinly sliced
- Pork crackling / scratchings
Sandwiches:
- 4 crusty sandwich rolls
Instructions
Prepare the Pork:
- In a bowl, mix the gochujang paste, soy sauce, honey, minced garlic, minced ginger, sesame oil, salt, and black pepper. Marinate the pork loin in this mixture, cover, and refrigerate for at least 1 hour, or overnight for better flavour.
Cook the Pork:
- Preheat your grill or barbecue to medium-high heat. Grill the marinated pork loin for about 5-7 minutes per side or until it's cooked through and has a nice char. Remove from the heat, let it rest for a few minutes, and then slice it into thin pieces.
Prepare the Miso Satay Sauce:
- In a small saucepan, combine miso paste, peanut butter, soy sauce, rice vinegar, honey, minced garlic, and minced ginger. Heat over low heat, stirring constantly, until the sauce is smooth. If it's too thick, you can adjust the consistency by adding a little water. Set the sauce aside.
Make the Crackling:
- Heat vegetable oil in a deep pan or skillet. Cut the pork skin or pork rinds into small pieces and fry them in the hot oil until they puff up and become crispy. Remove them from the oil, drain on paper towels, and season with salt.
Prepare the Spicy Peanut Slaw:
- In a large bowl, combine Napa cabbage, grated carrot, sliced cucumber, crushed peanuts, sliced chili pepper, mayonnaise, Sriracha sauce, rice vinegar, salt, and black pepper. Toss everything together until well combined.
Assemble the Sandwiches:
- Slice the crusty sandwich rolls in half and spread a generous amount of miso satay sauce on both halves. Place the Korean grilled pork slices on the bottom half of each roll.
- Top the pork with a portion of the spicy peanut slaw and some crispy crackling.
- Garnish each sandwich with fresh rocket leaves and thinly sliced red onion.
- Place the top half of the roll over the filling to complete the sandwich.
