Ingredients

Strawberry, Lime & Basil

  • 250 g Irish strawberries
  • 40 g icing sugar
  • Zest & juice 1 lime
  • 5 leaves basil

Creamy Filling

  • 150 g ready to pour custard
  • 100 g cream cheese
  • 125 g half fat creme fraiche whipped cream works too
  • Optional: ½ tsp vanilla bean paste or extract

Base

  • 5 double cream Oreo’s

Instructions

Strawberry, Lime & Basil Cheesecake

  • Macerate the strawberries. Slice the strawberries in half or quarters. Zest in the lime. Squeeze in the juice of the lemon. Sprinkle in the icing sugar. Very finely slice the basil and toss this in. Gently toss it all together and allow to sit while you do the rest.
  • Spoon the custard, half-fat creme fraiche & cream cheese into a bowl. Using a hand whisk or an electric whisk combine well. Stir in vanilla if using.
  • Crush the biscuits in a freezer bag. Spoon into the bottom of a glass. Dollop in the creamy filling. Gently spoon the lime & basil strawberries on top. Garnish with a little leaf of basil or a strawberry. Serve and eat immediately.
  • NOTE: Macerate the strawberries no more than 1 hour before using. Only assemble and build this dessert as you want to eat it. All the components can be made in advance.
