Heat olive oil in a large pan over medium-high heat. Once the oil is hot, add the chicken to the pan and cook for about 4-5 minutes until they're golden brown and cooked through.
Next add in the garlic and sauté for about a minute until fragrant, being careful not to burn the garlic.
Reduce the heat to low and add in the white wine, cream stock and seasoning to simmer for 5 minutes allowing the flavours to meld and reduce slightly. Stir through the sun-dried tomato pesto, spinach and grate over the parmesan cheese.
Garnish with fresh basil.
