Marry Me Chicken

  • 2 chicken breasts diced
  • 4 garlic cloves minced
  • 1 tbsp oil
  • 50 ml white wine
  • 1/2 stock pot
  • 50 g parmesan cheese
  • 1 large handful fresh spinach
  • 150 ml cream
  • ¼ tsp Italian seasoning oregano, rosemary, parsley, thyme
  • 2 tbsp sun-dried pesto


  • Heat olive oil in a large pan over medium-high heat. Once the oil is hot, add the chicken to the pan and cook for about 4-5 minutes until they're golden brown and cooked through.
  • Next add in the garlic and sauté for about a minute until fragrant, being careful not to burn the garlic.
  • Reduce the heat to low and add in the white wine, cream stock and seasoning to simmer for 5 minutes allowing the flavours to meld and reduce slightly. Stir through the sun-dried tomato pesto, spinach and grate over the parmesan cheese.
  • Garnish with fresh basil.
  • Serve the Marry Me Chicken with your choice of sides, such as pasta, creamy mashed potatoes, or roasted vegetables.
