  • 1 can 13.5 oz light coconut milk
  • 1 can 12 oz unsweetened evaporated coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons matcha green tea powder
  • 1/4 cup pure maple syrup or honey adjust to taste
  • 1-2 cups unsweetened almond milk adjust for desired consistency
  • Ice cubes for serving
  • Optional: Cinnamon sticks or matcha powder for garnish


  • In a blender, combine the light coconut milk, evaporated coconut milk, vanilla extract, ground cinnamon, ground nutmeg, matcha green tea powder, and pure maple syrup or honey.
  • Blend the mixture until smooth and well combined.
  • Taste the mixture and adjust the sweetness if needed by adding more maple syrup or honey.
  • Transfer the mixture to a large pitcher or container.
  • Stir in the unsweetened almond milk until you reach your desired consistency. Start with 1 cup and add more if needed.
  • Chill the Healthy Matcha Coquito mixture in the refrigerator for at least 1-2 hours to allow the flavours to meld together and the mixture to cool.
  • When ready to serve, fill glasses with ice cubes.
  • Pour the chilled Healthy Matcha Coquito over the ice in each glass.
  • Optionally, garnish each glass with a cinnamon stick or a sprinkle of matcha powder on top.
