Blend the mixture until smooth and well combined.
Taste the mixture and adjust the sweetness if needed by adding more maple syrup or honey.
Transfer the mixture to a large pitcher or container.
Stir in the unsweetened almond milk until you reach your desired consistency. Start with 1 cup and add more if needed.
Chill the Healthy Matcha Coquito mixture in the refrigerator for at least 1-2 hours to allow the flavours to meld together and the mixture to cool.
When ready to serve, fill glasses with ice cubes.
Pour the chilled Healthy Matcha Coquito over the ice in each glass.
Optionally, garnish each glass with a cinnamon stick or a sprinkle of matcha powder on top.
