It was a pleasure to join The Claire Byrne Show on Newstalk to share some simple ways to make your summer salads work a little harder. I hope you enjoy listening back to our conversation and pick up a few ideas to inspire your next meal.
Summer is the perfect time to embrace lighter meals, but a great salad should do far more than simply fill a plate. It should nourish, satisfy and leave you feeling energised long after you’ve finished eating.
The good news? You don’t need complicated recipes or expensive ingredients. Often, it’s the smallest changes that make the biggest difference.
Rather than throwing a few ingredients into a bowl, think about building your salad with intention. Layer different textures, include a variety of colours, and combine crisp vegetables with something warm for contrast. Fold through plenty of fresh herbs, add seasonal fruit for brightness, or finish with toasted nuts and seeds for crunch.
Most importantly, don’t forget the elements that help turn a side salad into a satisfying meal.
A quality source of protein—whether that’s grilled chicken, salmon, eggs, beans, lentils or cheese—helps keep you fuller for longer, while healthy fats from extra virgin olive oil, avocado, nuts or seeds add flavour and support the absorption of important nutrients.
Aim to include as many different plants as you can. Every vegetable, herb, seed, legume and wholegrain contributes to greater variety, supporting both your gut microbiome and overall wellbeing.
"Satiety isn't about eating more—it's about building a plate that nourishes, satisfies and gives your body what it truly needs."
Finally, don’t underestimate the dressing. A simple homemade vinaigrette made with extra virgin olive oil, lemon juice or vinegar, Dijon mustard and fresh herbs can completely transform even the simplest bowl of leaves.
The best summer salads aren’t complicated—they’re considered.
When you combine fresh seasonal ingredients with protein, fibre, healthy fats and plenty of flavour, you create a meal that looks beautiful, tastes incredible and truly satisfies.
Simple. Balanced. Elevated. That’s the difference thoughtful cooking can make.
