There’s something unmistakable about the flavours of summer.

The sharpness of lime. The brightness of lemon. Sweet mango. Tropical passionfruit. Creamy coconut. Fragrant yuzu. They’re the flavours that instantly transport us to warmer days, longer evenings and meals enjoyed outdoors.

When I joined The Claire Byrne Show on Newstalk, we explored why these flavours feel so synonymous with summer—and it turns out there’s more to it than nostalgia.

The French word vif translates as vivid, bright, alive and intense. It’s the perfect way to describe the flavours that define this time of year. They’re fresh, vibrant and full of energy, bringing life to everything from simple salads to summer desserts and refreshing drinks.

There’s science behind our love of them too.

During warmer weather we’re naturally drawn towards foods that feel lighter and more refreshing. Citrus fruits, tropical flavours and ingredients with natural acidity awaken the palate, stimulate the appetite and create that clean, vibrant finish we instinctively crave on a hot day. Add a chilled drink, fresh herbs or juicy seasonal fruit and every bite feels brighter.

For me, summer cooking is about letting ingredients do the work.

A squeeze of lemon over grilled fish. Fresh mango folded through a vibrant salad. Passionfruit spooned over Greek yoghurt. Coconut bringing creaminess to both sweet and savoury dishes. Small additions that deliver maximum flavour while keeping meals simple, colourful and satisfying.

Some of my favourite summer recipes embrace exactly these flavours, including my Sweet Passionfruit, Lime & Coconut Traybake, Lemon & Elderflower Tart, Paloma, Sweet Chilli & Mango Prawn Quinoa Salad, Lemon Pasta with Smoked Salmon, and Crispy Teriyaki Beef with Coconut & Chilli Rice with Smashed Cucumber & Mango Salsa.

"The flavours of summer don't need to be complicated. When you start with beautiful seasonal ingredients and let them shine, the simplest meals often become the most memorable. It's about eating with the season, embracing colour and creating food that feels as good as it tastes."

These are the recipes I come back to every summer because they celebrate what the season does best—fresh ingredients, bold flavours and effortless cooking.

The beauty of seasonal eating isn’t about following rules. It’s about tuning into what’s available, embracing variety and creating meals that leave us feeling both nourished and satisfied.

Because sometimes the flavours we crave most aren’t just delicious—they’re exactly what the season is asking for.
