The Six O’Clock Show | Strawberry Eton Mess Traybake

Delighted to be back in The Six O’Clock Show kitchen, and this time with one of my favourite kinds of recipes — something that feels a little bit special, but is actually very easy to make.

My Strawberry Eton Mess Traybake is a playful take on the much-loved summer classic. I’ve taken the familiar combination of sweet strawberries, softly whipped cream and crisp meringue and layered it over a light, delicate sponge to create a dessert that is generous, relaxed and made for sharing.

There is something wonderfully nostalgic about Eton Mess. It reminds me of long summer days, bowls of berries on the table and desserts that don’t need to be too perfect. In this version, the traybake makes it even easier — simply slice, pile high with strawberries and meringue, and let everyone help themselves.

It’s fresh, light and indulgent in equal measure, with plenty of texture from the crisp meringue against the soft sponge and creamy topping. It would be right at home at a summer lunch, a weekend gathering or simply served with coffee when you fancy something sweet.

I loved bringing this one to the Six kitchen — simple, seasonal food, with a little bit of theatre and lots of reasons to go back for another slice.
