The Story Behind The Gathering Supper Club

The Gathering Supper Club was born from a simple belief: that great food has the power to bring people together. Designed to celebrate Irish producers, thoughtful hospitality and modern entertaining, the evening was a reminder that the most memorable experiences are those built on connection.
Some evenings are remembered for what was served.
Others are remembered for how they made you feel.
Long after the last plate had been cleared and the final conversation had come to an end, that was the feeling I kept returning to after The Gathering Supper Club. It wasn’t just a dinner. It was an atmosphere. A room filled with curiosity, generosity and connection, where exceptional food became the starting point for meaningful conversation.
That feeling was intentional.
From the very beginning, my vision for The Gathering was to create something that reflected the best of modern Irish hospitality—an experience where beautifully crafted food sat alongside genuine storytelling, where artisan producers were given the space to share their passion and where guests felt part of something rather than simply attending an event.
For me, food has always been the invitation.
Connection is the purpose.
Every detail of the evening was designed to celebrate the richness of Ireland’s food landscape. Producers, growers and makers were placed at the heart of the experience, allowing guests to discover not only exceptional ingredients but also the stories, landscapes and families behind them. Every course became an opportunity to celebrate Irish provenance, craftsmanship and terroir in a way that felt contemporary, generous and accessible.
There is something incredibly special about bringing people together around one table.
People arrive as strangers, yet somehow leave having shared stories, exchanged ideas and discovered something new—whether that’s an artisan producer they’ve never encountered before, a fresh perspective on Irish food or simply the pleasure of slowing down long enough to enjoy the company around them.
That, to me, is hospitality at its very best.
The Gathering was also an opportunity to reflect what modern entertaining looks like today. Alongside beautifully paired wines and seasonal food, we created a thoughtfully curated alcohol-free bar that felt every bit as celebratory as every other part of the evening. It wasn’t positioned as an alternative or an afterthought; it was simply another beautiful choice.
That distinction matters.
Today’s guests expect experiences that feel inclusive, thoughtful and reflective of modern lifestyles. Hospitality is no longer about offering one way to celebrate. It is about creating spaces where everyone feels equally welcomed, whether they’re enjoying a glass of wine, a carefully crafted botanical cocktail or a sophisticated alcohol-free serve.
Choice, after all, is one of the greatest luxuries we can offer.
I often describe this approach as a touch of conscious luxe.
Not luxury defined by excess, but by intention.
Seasonal food prepared with care. Beautiful tables without formality. Thoughtful details that never feel overdesigned. Warmth over perfection. Quality over quantity. Experiences that leave people feeling nourished—not just by the food, but by the atmosphere, the conversation and the people around them.
That philosophy runs through everything I create.
Whether I’m designing a supper club, curating a festival experience, developing recipes, collaborating with brands or standing in front of the television cameras, I’m always asking the same question:
How do we make people feel something?
"The greatest compliment a guest can give isn't that the food was delicious. It's that they didn't want the evening to end."

Because when people feel connected, they remember.
They remember the producer whose story moved them.
They remember the ingredient they discovered for the first time.
They remember the atmosphere, the music, the conversations and the sense that, for one evening, they were part of something special.
That is where food becomes so much more than nourishment.
It becomes culture.
It becomes community.
It becomes a shared experience.
Looking around the room that evening, watching conversations unfold between producers, creatives, journalists, food lovers and industry friends, I was reminded that Irish food has never been stronger. Not simply because of the incredible produce we have, but because of the people who continue to champion it with such passion, generosity and creativity.
The Gathering was, ultimately, a celebration of those people.
A celebration of collaboration over competition.
Of provenance over trends.
Of meaningful hospitality over performance.
And a reminder that when we create spaces where people feel welcomed, inspired and genuinely connected, something extraordinary happens.
The evening may have come to an end.
The conversations continue.
I believe the most memorable experiences are those that leave people feeling more connected—to each other, to the food on their plate and to the stories behind it. Whether I’m collaborating with producers, designing a supper club, creating a festival experience or working alongside a brand, my aim is always the same: to create meaningful moments that celebrate great food, spark conversation and leave a lasting impression.
