  • 1 slice sourdough toasted
  • ½ avocado
  • 50 g peas cooked if frozen
  • Pinch sea salt
  • 25 g beetroot hummus
  • 1 tbsp feta cheese
  • 1 tbsp peanut rayu
  • Freshly ground black pepper


  • In a bowl, combine cooked peas with ½ avocado, sea salt and squeeze of lemon juice.
  • Toast sourdough bread, then spread with beetroot hummus and top with avocado and peas. Sprinkle over feta cheese, chilli peanut rayu.
