Ingredients
- 1 slice sourdough toasted
- ½ avocado
- 50 g peas cooked if frozen
- Pinch sea salt
- 25 g beetroot hummus
- 1 tbsp feta cheese
- 1 tbsp peanut rayu
- Freshly ground black pepper
Instructions
- In a bowl, combine cooked peas with ½ avocado, sea salt and squeeze of lemon juice.
- Toast sourdough bread, then spread with beetroot hummus and top with avocado and peas. Sprinkle over feta cheese, chilli peanut rayu.
