Ingredients

Ingredients:

  • 3 ripe peaches sliced (about 400g)
  • 125 g fresh blackberries about 125g
  • 75 g baby spinach about 60g
  • 40 g radicchio chopped (or any red colour lettuce )
  • 20 g grated parmesan cheese

For the dressing:

  • 60 mls freshly squeezed lemon juice
  • 60 mls extra-virgin olive oil
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions

Salad Time

  • In a large bowl, combine the sliced peaches, blackberries, baby spinach, and chopped radicchio.
  • In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to coat.
  • Top the salad with chopped pecans and grated parmesan cheese.
  • Serve immediately and enjoy!
