
Power Omelette
A versatile, high-protein omelette designed to use whatever you have in the fridge, finished with smart, flavour-packed toppings for a satisfying meal.

Ingredients
- 2 egg whites
- 1 egg yolk
- 70 g spinach
- 50 g deli turkey
- 3 pieces roast red pepper
- 1 baby has avocado
- 1 tbsp super seed mix
Instructions
- Separate the eggs, Whisk 2 egg whites and 1 yolk together.
- Wilt down the spinach on a warm pan. Add a drop of water if you need to. When wilted down, place on kitchen paper. Pat out all the excess water. Chop it up finely and season. This is the clever trick to get you eating spinach without even knowing it.
- Dice up the deli turkey.
- Open the jar of roast red peppers. Drain and dice 2/3 piece.
- Add a little oil or spray oil to a non-stick pan ( the non-stick pan means you use less oil ). Add in the power omelette mix. Cook for about 3.4 minute on one side. Flip out onto a plate, slice it back into the pan and cook the other side.
- When cooked, topped with the sliced baby hass avocado and a tbsp of my super seed mix.
- Enjoy.
