Apple & Cinnamon Overnight Oats
A simple breakfast that does the work for you overnight. Creamy oats, sweet apple, warming cinnamon and a little crunch come together for a satisfying start to the day. I love this one for busy mornings when you want something nourishing already waiting in the fridge.
The beauty of overnight oats is in the balance. The oats and chia provide fibre, yoghurt adds protein, while the apple brings natural sweetness and texture. It’s a small example of how a few simple ingredients can create a breakfast that keeps you satisfied for longer — without making food complicated.
Ingredients
- 50 g rolled oats
- 150 ml milk of your choice
- 100 g natural Greek yoghurt
- 1 small apple grated
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1 tsp honey or maple syrup
- ½ tsp vanilla extract
- Pinch of sea salt
To serve
- A few slices of fresh apple
- 1 tbsp chopped walnuts or pecans
- Extra cinnamon
- Spoonful of Greek yoghurt
- Drizzle of honey if desired
Method
- Add the oats, milk, Greek yoghurt, grated apple, chia seeds, cinnamon, honey, vanilla and sea salt to a jar or bowl. Stir well until everything is combined.
- Cover and place in the fridge overnight, or for at least 4 hours. The oats and chia seeds will absorb the liquid, leaving you with a creamy, spoonable breakfast.
- In the morning, give everything a good stir. Add a splash of milk if you prefer a looser consistency, then top with fresh apple, nuts, a little extra cinnamon and yoghurt.
