Ingredients
For the seedy crackers
- 280 g mixed seeds — sunflower pumpkin, flax and sesame
- 60 g chia seeds
- 45 g psyllium husks
- 1 tsp fennel seeds
- ½ tsp dried thyme
- 1½ tsp sea salt
- 45 ml olive oil
- 200 ml boiling water
For the high-protein whipped feta
- 280 g cottage cheese
- 100 g feta cheese
- 1-2 tsp olive oil optional
- Freshly cracked black pepper to taste
- Squeeze of lemon juice optional
- Fresh dill or basil optional
To serve
- Hot honey
Method
- Add the mixed seeds, chia seeds, psyllium husks, fennel seeds, thyme and sea salt to a large bowl and mix well.
- Stir in the olive oil and boiling water. Mix thoroughly and leave to stand for 10 minutes until the mixture has thickened.
- Preheat the oven to 150°C. Line a large baking tray with parchment paper. Spread the seed mixture evenly over the tray to approximately 2–3mm thick. Score lightly into cracker-sized pieces with a knife.
- Bake for 35–40 minutes. Carefully flip the cracker sheet, peel away the parchment paper and return to the oven for a further 20–25 minutes, until crisp and golden.
- While the crackers are baking, make the whipped feta. Add the cottage cheese and feta to a food processor and blend until smooth and creamy.
- Add the olive oil, if using, and season with black pepper. Add a squeeze of lemon juice and fresh herbs, if using, and blend briefly again.
- Allow the crackers to cool completely before breaking into pieces.
- Serve the crackers topped with whipped feta and finished with a drizzle of hot honey.
