Slow Cooker BBQ Pulled Pork
This is the recipe for the days when you want dinner to look after itself.
The pulled pork goes into the slow cooker in the morning and fills the house with the kind of smell that brings everyone to the kitchen by evening. The quiet trick here is grating the vegetables into the sauce base — they melt into the cooking liquid, adding sweetness, body and depth without taking over.
Serve it as a proper spread with herb-flecked wholegrain basmati rice, homemade gluten-free wrap nachos, fresh smashed guacamole, cool sour cream and a drizzle of chilli peanut rayu for those who like a little heat.
This recipe is designed to be gluten-free when you use gluten-free labelled barbecue sauce, tamari, wholegrain basmati rice and wraps. For anyone following a strict gluten-free or coeliac diet, always check the labels of all packaged ingredients, including spices, peanuts, sour cream and sauces, and choose products labelled gluten-free where necessary. Ingredients and manufacturing processes can change, so always check the packaging you are using.
