5-Minute Creamy Tomato Soup
A quick, comforting tomato soup that’s smooth, flavourful, and ready in just five minutes. Perfect for a light lunch, a speedy starter, or a cosy snack, with an optional swirl of cream or fresh herbs to elevate it.
No blitzing required — passata keeps it smooth and creamy without extra work. Adjust sugar slightly if your tomatoes are very acidic. Perfect for a quick lunch, feeding kids, or as a speedy starter.
Ingredients
- 400 ml passata
- 2 tbsp tomato purée
- 300 ml vegetable stock or water + stock cube
- 2-3 tbsp cream optional, for richness
- ½ tsp sugar to balance acidity
- ¼ tsp onion powder
- ¼ tsp garlic powder
- Salt and pepper to taste
Method
- In a small saucepan, combine the passata, tomato purée, and vegetable stock.
- Stir in the onion powder, garlic powder, and sugar.
- Bring gently to a simmer over medium heat.
- Let it bubble lightly for 3–4 minutes to cook the tomato, soften the flavours, and warm it through.
- Remove from heat and stir in cream if using.
- Taste and adjust seasoning with salt and pepper.
- Serve immediately, with a swirl of cream, fresh herbs, or toasted croutons if desired.
