Brown Butter Peach Cobbler
A golden, bubbling cobbler that’s all about simple summer comfort. Sweet ripe peaches are caramelised in nutty brown butter and vanilla, then topped with a buttery, cookie-style cobbler crust that bakes to perfection. Juicy, jammy and irresistibly nostalgic — serve warm with vanilla ice cream or custard for the ultimate treat.
Ingredients
For the Brown Butter Peaches:
- 8 ripe peaches or a mix of fresh & tinned peaches
- 4 tbsp dark muscovado sugar
- 4 tbsp butter soft
- 1 tbsp vanilla extract
- Optional: 1 tbsp cornflour if using all tinned peaches
For the Cobbler Topping:
- 150 g unsalted butter
- 180 g Odlums Cream Plain Flour
- 180 g granulated sugar plus extra for sprinkling
- 1 heaped tsp Odlums Baking Powder
- 1 tsp fine sea salt
Method
Prepare the Peaches
- Slice the peaches by cutting around the middle and twisting to remove the stone. Slice each half into about five pieces.
- Brown the Butter & Caramelise
- In a large pan, melt the butter over medium-high heat until it foams and turns golden brown. Add the peaches and toss to coat. Stir for 3–4 minutes until the fruit softens and begins to caramelise. Stir in the vanilla, then remove from the heat and let cool slightly until jammy.
Make the Cobbler Topping
- Using a stand mixer with the paddle attachment (or by hand), combine butter, sugar, flour, baking powder, and salt until a soft, cookie-dough-like batter forms.
Assemble & Bake
- Spoon the peaches into a baking dish. Drop scoops of cobbler dough over the top, spreading gently with a spoon or your fingers — it doesn’t need to be perfect. Sprinkle with sugar for a little crunch.
- Bake for 35–40 minutes until golden on top and bubbling around the edges.
Rest & Serve
- Let it stand for 15 minutes to thicken into a luscious, saucy base.
🍨 Serving Suggestion
- Serve warm with a scoop of vanilla ice cream or a drizzle of custard cream.
