Classic Prawn Cocktail with Marie Rose Sauce

A timeless favourite, this prawn cocktail pairs succulent, chilled prawns with a creamy, tangy Marie Rose sauce. Light, elegant, and effortlessly classic, it’s the perfect starter for lunch, dinner parties, or any occasion that calls for a touch of nostalgia.

Ingredients

For the Marie Rose Sauce:

  • 4 tbsp mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tsp brandy
  • 1 tsp Worcestershire sauce
  • Juice of ½ lemon
  • Salt and freshly ground black pepper to taste
  • Optional: a dash of Tabasco

For the Cocktail:

  • 400 g cooked prawns peeled and deveined
  • 1 small lemon thinly sliced
  • ½ cucumber cut into thin strips
  • 1 yellow cucumber peeled into long thin ribbons for weaving
  • Fresh dill fronds for garnish

Method

  • Make the sauce: In a small bowl, mix mayonnaise, ketchup, brandy, Worcestershire sauce, lemon juice, salt, pepper, and Tabasco (if using) until smooth and creamy.
  • Dress the prawns: Gently fold the cooked prawns into the Marie Rose sauce until evenly coated.
  • Assemble the cocktails: Divide the dressed prawns into four small glasses or bowls. Garnish each with a lemon slice, a few cucumber strips, and a delicately woven yellow cucumber ribbon threaded onto a cocktail stick.
  • Finish with dill: Add tiny sprigs of fresh dill fronds on top for a fresh, elegant finish. Serve immediately.
