Hamptons Deli -Style Chicken Salad Spread

Bright, creamy, and totally shareable, this chicken salad spread takes tender poached chicken and mixes it with crisp celery, sweet apple, and just the right touch of mayo. Smooth yet textured, it’s perfect on crackers, artisan bread, or alongside fresh veggies and grapes for a casual, feel-good sharing board that’s as easy to make as it is delicious.

Ingredients

  • 500 g chicken fillets
  • 1 chicken stock pot
  • 3-4 tbsp real mayonnaise
  • 1 stick celery roughly chopped
  • ½ pink lady apple peeled and chopped
  • Salt & black pepper to taste
  • Optional garnish: fresh herbs dill, parsley, chives

For the sharing board:

  • Rice crackers or artisan bread slices
  • Carrot sticks
  • Celery sticks
  • Grapes
  • Cornichons

Method

  • Poach the chicken:
  • Place chicken fillets in a saucepan, cover with water, and crumble in the chicken stock pot.
  • Bring to a gentle simmer and poach until cooked through (about 12–15 mins). Remove and let cool slightly.
  • Blitz the salad:
  • In a food processor, combine poached chicken, mayonnaise, celery, and apple.
  • Pulse until smooth but still slightly textured — almost a pâté consistency.
  • Taste and season with salt and black pepper.
  • Assemble the sharing board:
  • Spoon the chicken salad into a small bowl or ramekin.
  • Surround with rice crackers, carrot & celery sticks, grapes, and cornichons.
  • Garnish with fresh herbs if desired.
