Marry Me Chicken
A dish worth a marriage proposal
Ingredients
- 2 chicken breasts diced
- 4 garlic cloves minced
- 1 tbsp oil
- 50 ml white wine
- 1/2 stock pot
- 50 g parmesan cheese
- 1 large handful fresh spinach
- 150 ml cream
- ¼ tsp Italian seasoning oregano, rosemary, parsley, thyme
- 2 tbsp sun-dried pesto
Method
- Heat olive oil in a large pan over medium-high heat. Once the oil is hot, add the chicken to the pan and cook for about 4-5 minutes until they're golden brown and cooked through.
- Next add in the garlic and sauté for about a minute until fragrant, being careful not to burn the garlic.
- Reduce the heat to low and add in the white wine, cream stock and seasoning to simmer for 5 minutes allowing the flavours to meld and reduce slightly. Stir through the sun-dried tomato pesto, spinach and grate over the parmesan cheese.
- Garnish with fresh basil.
- Serve the Marry Me Chicken with your choice of sides, such as pasta, creamy mashed potatoes, or roasted vegetables.
