A new take on a comfort food.
Ingredients
Ingredients:
- 500 g frozen strawberries
- 3 tablespoons chia seeds
- 2 tablespoons local honey
- 1 teaspoon vanilla extract
Method
Method
- Thaw the frozen strawberries in a large bowl and mash them with a potato masher or fork until they are broken down into small pieces.
- Add chia seeds to the bowl and stir to combine.
- Add honey and vanilla extract to the bowl and stir again.
- Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb some of the liquid and thicken the jam.
- Transfer the mixture to a saucepan and heat over medium heat, stirring frequently, until the jam begins to boil.
- Reduce the heat to low and let the jam simmer for 10-15 minutes, stirring occasionally, until it has thickened to your desired consistency.
- Remove from heat and let the jam cool completely before transferring it to a jar and storing in the refrigerator.
