    For the Salad

    • 800 g sweet potatoes peeled and cut into bite-sized cubes
    • 2 tablespoons olive oil
    • 1 tsp cumin 1 tsp smoked paprika, 1 tsp onion powder, 1 tsp garlic powder
    • Salt and pepper to taste
    • 100 g feta cheese crumbled
    • 50 g walnuts roughly chopped
    • 100 g mixed salad greens

    For the Orange Dressing

    • 75 mls freshly squeezed orange juice
    • 2 tablespoons red wine vinegar
    • 2 tablespoons Dijon mustard
    • 1 clove garlic minced
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 cup extra-virgin olive oil
    • For the Tahini Drizzle
    • 2 tablespoons tahini
    • 1 tablespoon water or more as needed
    • Juice of half a lemon
    • Salt to taste



    • Sweet Potato: Preheat the oven to 200°C . Sprinkle the spice mix over the sweet potato. Place the sweet potato cubes on a baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat the sweet potatoes evenly. Roast the sweet potatoes in the preheated oven for 25-30 minutes or until they are tender and slightly caramelized. Remove from the oven and set aside to cool slightly.
    • Dressing: In a small bowl, whisk together the orange juice, red wine vinegar, Dijon mustard, minced garlic, dried oregano, dried basil, salt, and black pepper to make the orange dressing. Adjust the seasonings according to taste.
    • Tahini Drizzle: In another small bowl, whisk together the tahini, water, lemon juice, and salt to create a smooth drizzling consistency. Add more water if needed.
    • Assembly: In a large salad bowl, combine the roasted sweet potatoes, crumbled feta cheese, chopped walnuts, and mixed salad greens. Drizzle the orange dressing over the salad and toss gently to coat all the ingredients. Drizzle the tahini mixture over the salad as a flavourful garnish. Serve the salad immediately and enjoy!
