Instructions
Traybake with Glaze
- Preheat the oven to 200°C fan / 220°C conventional. Line a large baking tray with parchment.
- Make the glaze: In a small bowl, whisk together sesame oil, gluten-free soy sauce, honey, gochujang, garlic, ginger, and rice vinegar until smooth and glossy.
- Toss the sweet potatoes, peppers, and onion with half the glaze. Spread evenly on the tray. Roast for 15 minutes.
- Remove the tray, push vegetables to the sides, and place salmon fillets in the centre. Brush salmon generously with remaining glaze.
- Roast for 15–18 minutes, until salmon is just cooked through and sweet potatoes are tender and caramelised.
- For extra gloss, spoon some glaze over the salmon and vegetables in the last 2 minutes of roasting.
- Sprinkle with sesame seeds and fresh coriander. Optional: drizzle a tiny bit of toasted sesame oil over the salmon for extra aroma. Serve with Jasmine rice.
Method – Air Fryer
- Preheat air fryer to 180°C.
- Toss sweet potatoes, peppers, and onion with half the glaze. Cook in the air fryer basket for 10 minutes, shaking halfway.
- Add salmon fillets on top, brush with remaining glaze, and cook for 8–10 minutes until cooked through and glossy.
- Garnish with sesame seeds, coriander, and optional toasted sesame oil.
Jasmine Rice
- Rinse rice under cold water until clear.
- Combine rice, water, and a pinch of salt in a medium saucepan. Bring to a boil, reduce to a simmer, cover, and cook 10–12 minutes.
- Remove from heat, keep covered for 5 minutes, then fluff with a fork.
Notes
Tips – Glossy, Family-Friendly Korean Traybake
Balance sweetness and spice: Adjust honey/gochujang to taste – start mild for little ones.
Even caramelisation: Toss veggies well with glaze and ensure salmon is coated evenly.
Gloss factor: The vinegar and last-minute glaze spooning create that “restaurant-style shine.”
Air fryer shortcut: Don’t overcrowd the basket; cook in batches if necessary.
Meal prep bonus: Extra glaze can be stored in fridge for a quick drizzle over leftovers.
