Ingredients
For Triple-Cooked Chips:
- 4 large Rooster potatoes leave the skin on
- Cooking oil for frying
- 2 tbsp Spice Bag Mix see recipe below
For the Peppers and Onions:
- 1 red bell pepper sliced into long strips
- 1 green bell pepper sliced into long strips
- 1 white onion sliced into long strips
- Cooking oil for frying
For the Pork:
- 250 g pork belly
- 500 mls Chicken or vegetable stock
- 1 Star anise
- 2 tbsp Spice Bag Mix see recipe below
- 4 tbsp Cornflour for coating
- Cooking oil for frying
For Garnish:
- Spring onions finely sliced

Instructions:
- Prepare Triple-Cooked Chips:
- Cut potatoes into thick strips.
- Parboil potato strips, then deep fry until crispy and season with spice bag mix.
- Cook Peppers and Onions:
- Sauté red and green bell peppers and white onion in a pan with cooking oil, then season with spice bag mix.
- Prepare the Pork:
- Slow-cook pork belly in stock with star anise and spice bag mix for 6 hours until tender.
- Cool, pat dry, chop into chunks, coat with cornflour and Chinese 5 spice, and deep fry in hot oil until crispy.
- Assemble and Serve:
- Combine chips, sautéed peppers and onions, and crispy pork in a brown paper bag for that authentic "takeaway" vibe.
- Garnish with chopped spring onions.
