  • 500 g leftover mashed potatoes
  • 20 g dried truffle ground ( taste and adjust to your desired liking )
  • 50 g confit garlic
  • Sea Salt and pepper to taste
  • 2 eggs beaten
  • 100 g breadcrumbs
  • Oil for frying



  • In a large bowl, mix together the mashed potatoes, ground truffle, and confit garlic. Season with salt and pepper to taste.
  • Shape the mixture into small croquettes, about the size of a golf ball.
  • Dip each croquette into the beaten eggs, then coat with breadcrumbs.
  • Heat oil in a deep fryer or large pan to 180°C (350°F).
  • Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch.
  • Remove from the oil and drain on paper towels.
  • Serve hot and enjoy the delicious truffle and confit garlic flavours in every bite.
