Vanilla Chia Seed Pudding

Vanilla Chia Seed Pudding aisling larkin

Ingredients

  • 4 tbsp chia seeds
  • 150 ml milk or milk alternative
  • 1 tsp vanilla extract

Toppings

  • Large handful of mixed berries
  • Sprinkle of nuts and seeds
  • 1 tsp almond/peanut butter
  • 1 tbsp Greek, plain or coconut yoghurt

Instructions

  • Put the chia seeds, milk and vanilla extract in a bowl or jar and stir with a fork for 30 seconds to incorporate all the seeds and the milk and then leave it to rest overnight.
  • In the morning top the soaked chia seed pudding with your fruit, nut butter and yoghurt or your favourite nuts and seeds.
  • Enjoy.
