Step 1 — Soak the dates (start here, it takes 15 minutes)
Put the pitted dates in a bowl and cover completely with boiling water. Leave for 15 minutes — this is what makes the caramel smooth rather than grainy. While they soak, make the base.
Step 2 — Make the crispy base
Combine the peanut butter and honey in a small saucepan over the lowest heat possible. Stir gently until they come together into one smooth, pourable mixture — about 2 minutes. Do not let it boil.
Put the rice krispies, puffed quinoa, milled chia seeds, and milled flaxseeds into a large bowl and stir to combine. Pour the warm peanut butter mixture straight over them. Stir immediately to coat every grain — you need to move quickly here as it firms up fast.
Tip into the prepared tin and press down firmly and evenly. Use the back of a wet metal spoon to get it flat, then press with damp hands to compact it well. The base should be approximately 1cm thick and solid, not loose.
Refrigerate for 20 minutes until completely firm.
Step 3 — Make the date caramel
Drain the soaked dates but keep the soaking water. Transfer the dates to a food processor with the peanut butter, vanilla bean paste, and sea salt. Add 50ml of the warm soaking water. Blitz until completely smooth — this takes about 2 minutes, stopping to scrape down the sides. The caramel should be thick and spreadable, like smooth peanut butter. If it needs loosening, add soaking water a tablespoon at a time.
Step 4 — Add the caramel layer
Take the base from the fridge — it should feel firm to the touch. Spoon the date caramel over it and spread in an even layer using a palette knife or the back of a wet spoon dipped in hot water. Work gently so you don't disturb the base.
Refrigerate for 20 minutes until the caramel has firmed slightly at the surface.
Step 5 — Pour the chocolate
Melt the chocolate and coconut oil together in a heatproof bowl set over a pan of barely simmering water, stirring until completely smooth. Alternatively, microwave in 20-second bursts on half power, stirring between each.
Take the tin from the fridge. Pour the chocolate over the caramel layer in one go and tilt the tin gently to level it — don't spread with a spatula or you'll drag the caramel up into the chocolate.
Refrigerate for 20–30 minutes until the chocolate is fully set and snaps when tapped.
Step 6 — Cut
Lift the slab out of the tin using the parchment. Run a large sharp knife under very hot water, dry it, and cut into 16 bars — 4 cuts one way, 4 cuts the other. Re-warm the knife between cuts for clean edges.
Store in an airtight container in the fridge. Best eaten within 5 days.
What Each Layer Should Look Like
Base: Golden, tightly packed, holds its shape when pressed. Doesn't crumble when you lift a piece.
Caramel: Deep brown, glossy, thick. Spreads like cold peanut butter — not runny, not stiff. If it's running off the base it needs more fridge time on the caramel itself before the chocolate goes on.
Chocolate: Flat, even, matte once set. Should snap cleanly when cut.
If Something Goes Wrong
Base is crumbling: It wasn't pressed firmly enough, or the PB/honey mix was too cool before mixing. Reheat the mix slightly and re-press.
Caramel is too runny to spread: Refrigerate the caramel itself for 10 minutes before spreading. Or blitz again with less soaking water.
Chocolate dragging when you cut: Your knife isn't warm enough. Run it under boiling water and dry before each cut.
